SUPER red quinoa salad
SUPERFOOD: quinoa, this time the “red” kind: really delicious with a nutty flavor. Quinoa is a whole grain, naturally gluten-free, high in fiber and high-quality protein. And did I mention totally delish??! For this salad I used: cucumber, avocado, cilantro, lemon / garlic / olive oil dressing and green squash. SUPER yum and SUPER refreshing.

DIY veggie burgers rock

Ok, so this is me really trying, hard… Homemade veggie burgers, yay! Turned out to be a bit more work than I anticipated but it was totally worth it.

Burger: 3 cups sautéed mushrooms + 1 sautéed red onion + 2 cups cooked brown rice + 2 large tb spoons of your fav pesto (can make it yourself too!) + 1 cup of cooked lentils + 1/4 cup sun dried tomatoes. Throw it all in the blender shortly (!), add ½ to 1 cup of whole wheat flower to make patties and bake em in the oven for 30 minutes (15 min on each side @ 350F or 180C).

Topping & side: For on the burger some spinach + avocado + lime + cilantro guacamole and as a side oven roasted cauliflower.
