Green lentil salad
This is my new favorite! Cook 2 cups of lentils, let them cool. Shortly sauté lots of spinach and green squash. Add some cooked red quinoa, and make a dressing with garlic, cilantro, cumin and lime. xo be
I love couscous: easy to prepare, it has a nice bite to it and fills you up too. For this salad i used whole wheat couscous, made with cumin and cinnamon, roasted sweet potato, onion, snow peas, carrot and cucumber, cumin and some chopped up almonds. First make the couscous, then sauté the veggies: done in 5. yeah.
A raw green squash pasta with mushrooms, broccoli, spinach, garlic and sun dried tomatoes. Super good! I just got this veggie “turning slicer”, with which I can make squash pasta among many other things. Did you know green squash is really good raw?? Great alternative for (whole wheat) pasta!
