My favorite breakfast threesome

Saturday morning can’t start any better than with homemade pancakes and freshly brewed coffee! Right??!

Did you know it’s super easy to make “ordinary” pancakes vegan? I used a whole wheat pancake mix. Then just sub the dairy milk with almond or soy milk, add half a banana instead of an egg and tata!

Houston: the heat is on! my oh my… 4:30 am, 80F…
After a early 9 mile run, it’s now time for breakfast. Today a bowl of soy yogurt with some banana and my favorite *s t r a w b e r r i e s*. I also threw in some chia seeds, rolled oats, ground flax seeds.

Cooking with Tempeh is super easy and very tasty.
You can buy it in the store, ready to go. Chop it up and stir fry it in a pan.

I added some green beans+broccoli+green cabbage+garlic red onion and brown rice. Oh yes, and of course: throw in a spicy sajoer Boemboe. Super simple & ready in a quickie!

Sunday is race day: it’s marathon preparation time (plant based that is). So, carb loading is important for your endurance performance, but seriously: doesn’t have to be Pasta all the time!! At least not breakfast, that is.

Alternative card loading: Bowl of soy yoghurt, rolled oats, chia seeds, hemp hearts, some raw almonds and black berries.
