I love couscous: easy to prepare, it has a nice bite to it and fills you up too. For this salad i used whole wheat couscous, made with cumin and cinnamon, roasted sweet potato, onion, snow peas, carrot and cucumber, cumin and some chopped up almonds. First make the couscous, then sauté the veggies: done in 5. yeah.

Sweet potato loves kale too!

Sweet potato and Kale: a bitter sweet love affair.
Kale has been a favorite of mine for a long long time, but sweet potato is coming very close. The combination of the two works great.

I prepared some Bulgar wheat in tomato broth and sautéed the kale and sweet potato with a red onion.
Wanted to add some cumin, turned out to be cinnamon, oops. And then added some cumin anyway: super flavorful meal!

Almost weekend!!! Woohoo. Love that. Since my Saturday morning is always preoccupied with my long run…. Sunday morning is my favorite 🙂 especially with my best friend “coffee”.

Whole wheat bread with homemade hummus, avocado and golden tomatoes.

Marathon: DONE! yay (veggie style)

Finally, Marathon Houston: done! And it was a rough one: wind, rain and freaking cold: not your typical Houston weather. My first all plant-based marathon, no cheating this time. And it felt great (for as far as a marathon can actually feel great that is). Often people ask me if i get in enough proteins by eating plants, or explain to me that i really should eat animal proteins when running so much. I disagree, but you do have to choose your “plants” wisely. And yes, sometimes in training i’ll take an extra hemp protein shake.
Long story short: plant based marathon was a success!
I had as much (or maybe even more) energy as when i was eating meat and dairy. Try it!!
