Big ass smoothie for the Friday

I am a fortunate girl to have both a juicer and vitamix. This morning i used them both for my smoothie. Not ideal for dish washing purposes but awesome for the smoothie.

This smoothie is the perfect kick starter for your Friday!

First the Juicer: 3 big carrots, 1 apple, piece of ginger, 5 kale leafs , 1/2 cucumber.

Then throw the juice in the vitamix plus some fresh grapefruit juice, some pineapple, ice, chia seeds, flax and bunch of fresh spinach. Mix it Et voila! Super energizing green power smoothie! Enjoy!

I got a Vitamix, hooray! The McDaddy of blenders! As you can tell, I’m very happy about it 🙂 Let’s have a liquid lunch!
So far this is my best (green) one. Spinach, kale, rolled oats, mango, ice cubes, water, some carrot, flax seeds and (of course) some SUPER chia seeds. Drink instantly. Yeah.

SUPERFOOD: quinoa, this time the “red” kind: really delicious with a nutty flavor. Quinoa is a whole grain, naturally gluten-free, high in fiber and high-quality protein. And did I mention totally delish??! For this salad I used: cucumber, avocado, cilantro, lemon / garlic / olive oil dressing and green squash. SUPER yum and SUPER refreshing.

For a hot summer night!

overview copyWhen summer comes around and it’s hot & sticky, I like to eat light foods and yes, grill! Where I started off couple years ago with big juicy (delicious!) steaks (and yes they are bigger and better in Texas), now it’s mostly V E G G I E S. And I’m loving it. All of it 🙂 This week some veggie inspiration for a nice warm summer dinner (preferably at a pool or beach of course).

Chop up all the veggies you can find and put them on a screwer, wrap them up in aluminum foil or just throw them on the grill. YUM! Season your veggies with olive oil, lemon juice, garlic, sea salt and some cumin for great flavors. I chopped up some collard greens, green squash, green bell pepper, mushrooms, onion.

Great as a side dish and provides good substance to your meal: Israeli couscous. After preparing the couscous, I added cumin, ground cilantro, salt, garlic, splash of lemon juice & red pepper to spice it up a bit. Then added some tomato, avocado, fresh cilantro cucumber. I could eat this all day.

couscous copyThe cauliflower is oven roasted (haven’t actually tried to grill that yet). Chop up a good size cauliflower and sprinkle it with some a mix of olive oil, garlic, lemon and whole cumin seeds. Roast it for about 25 minutes @375 F and add some sea salt and ground cumin. Done.

A food journal for a day

Every other week i blog for the website ” model-list ID”. This weeks blog entry was a food journal of just another delicious veggie day.

Breakfast: I love to start the day with a fresh juice! Every day I make a different one with whatever I can find in the fridge. Not being picky can lead to interesting results 🙂 . If I have a busy morning I sometimes like a sandwich too. Hummus, spinach, avocado is one of my fav’s.

Lunch: This picture is taken at a great little place here in Houston called “Green Seed Vegan”. Lots of raw and vegan specials. Really really good. I had a green veggie smoothie and some nori. YUM!

Dinner: Lentil salad! So easy to make, really delicious and nutritious! I used organic french green lentils and lots of colorful sautéd veggies (sweet potato, broccoli, spinach, onion and artichoke) with garlic and some olive oil. Then to give it a nice fresh bite add some raw green onion. Use ground cumin, cinnamon & splash of lime to give it a nice flavor.

summer couscous for the weekend!

I love couscous: easy to prepare, it has a nice bite to it and fills you up too. For this salad i used whole wheat couscous, made with cumin and cinnamon, roasted sweet potato, onion, snow peas, carrot and cucumber, cumin and some chopped up almonds. First make the couscous, then sauté the veggies: done in 5. yeah.
