Fiesta: colorful veggie chili

This is a super easy dish, does not take a lot of time to make (15 minutes if you plan it well) and looks great! Def a winner in my book!

I used brown rice, black beans, veggie ground crumbles (really does look like ground beef!), onion, some taco spices, cilantro, spinach, corn, tomatoes and on top some guacamole. Yum!

This breakfast will definitely satisfy and I promise that you won’t feel hungry after 2 hours!
Easy and whole foods: chopped up green apple, banana, some almonds, raisins, rolled oats and SUPERFOOD: chia seeds. Rich in omega-3 fatty acids,
and provides your body with protein, vitamins (A, B, E and D) and minerals (calcium, copper, iron, magnesium, potassium, zinc and more!).

Liquid lunch

I got a Vitamix, hooray! The McDaddy of blenders! As you can tell, I’m very happy about it 🙂 Let’s have a liquid lunch!
So far this is my best (green) one. Spinach, kale, rolled oats, mango, ice cubes, water, some carrot, flax seeds and (of course) some SUPER chia seeds. Drink instantly. Yeah.

Just scoop it!!

Okay: it doesn’t get any better than this!!! Eatpastry has created something soooooo wonderful and you can scoop it right on the baking sheet: vegan chocolate chip cookies. Need I say more???!!! No eggs, no butter, almost sounds to good too be true. Total deliciousness, done in 10 min.

For a hot summer night!

overview copyWhen summer comes around and it’s hot & sticky, I like to eat light foods and yes, grill! Where I started off couple years ago with big juicy (delicious!) steaks (and yes they are bigger and better in Texas), now it’s mostly V E G G I E S. And I’m loving it. All of it 🙂 This week some veggie inspiration for a nice warm summer dinner (preferably at a pool or beach of course).

Chop up all the veggies you can find and put them on a screwer, wrap them up in aluminum foil or just throw them on the grill. YUM! Season your veggies with olive oil, lemon juice, garlic, sea salt and some cumin for great flavors. I chopped up some collard greens, green squash, green bell pepper, mushrooms, onion.

Great as a side dish and provides good substance to your meal: Israeli couscous. After preparing the couscous, I added cumin, ground cilantro, salt, garlic, splash of lemon juice & red pepper to spice it up a bit. Then added some tomato, avocado, fresh cilantro cucumber. I could eat this all day.

couscous copyThe cauliflower is oven roasted (haven’t actually tried to grill that yet). Chop up a good size cauliflower and sprinkle it with some a mix of olive oil, garlic, lemon and whole cumin seeds. Roast it for about 25 minutes @375 F and add some sea salt and ground cumin. Done.
